Baking fun.

There has been a lot going on here – S’s mum is in hospital and he has been backwards and forwards there – the boys don’t really know what is going on – we are trying to move house – E is about to leave preschool and begin school – and of course Baby T has only been here 4 months. So I have been conscious that we need to do a lot of simple but lovely things together.

Baking is always popular so we have been trying out lots of new recipes together. One big hit was this Blueberry Blondie recipe from this months Country Living Magazine.Susbcribe Now!

Blueberry Blondies.(we have adapted it slightly for small children taking out nuts and reducing chocolate amount)

175g soft butter

175g caster sugar

175g soft light brown sugar

3 eggs

1 tsp vanilla extract

225g plain flour

1 tsp baking powder

150g blueberries

50g dark chocolate chips

Heat the oven to 180C Gas Mark 4. Grease and line a brownie tin (20cmx30cm).

Beat together the butter and sugars until light and fluffy. Beat the eggs and gradually beat into mix. Add vanilla extract. Fold in the flour and baking powder. Add the rest of the ingredients. Pour into tin and bake for 40 minutes. leave to cool in the tin and then cut into squares.

Delicious and great to make with 2 children as there is lots to do.
